The Fluffiest Pumpkin Spice Cookies

Fall is just around the corner and my absolute favorite cookies are waiting so patiently to be baked so our home is filled with an aroma of pumpkin and spice. These fluffy pumpkin spice cookies are like little pillows bursting with flavor. The melted maple flavored frosting drizzled on top, a soft center, and the right amount of autumn spices puts these on my must-bake list when September rolls around and friends are coming over. They also make a great addition to take to dinner parties as a contribution or little gift for the host. Tie a red velvet ribbon around a cellophane bag as a thank you gift instead of taking a bottle of wine. 

Do They Freeze Well?

Yes! These are such a favorite of mine that I tend to make them in huge batches and just freeze the dough I’m not yet ready to use. When I have the craving for these soft and chewy cookies, I just pull out the frozen dough, let it thaw a bit, and pop them in the oven. Make the frosting while they are baking and drizzle it on them when they are warm! 

Can I Use Canned Pumpkin?

Of course! Puree pumpkin works so well in these cookies. I once went to the trouble of testing real pumpkin verses canned, and could tell no difference. Don’t even go to the trouble! Puree pumpkin is sold all year round. Even better!

What is the Difference Between Pumpkin Purre and Pumpkin Pie Filling?

When you’re baking these cookies, it’s important to use pumpkin puree rather than pumpkin pie filling. Pumpkin puree is 100% pure pumpkin so if you’re worried about grabbing the wrong thing, just check the ingredient list on the can! Pumpkin pie filling has sweetener added to it – and we don’t want that! Just be careful when grabbing your pumpkin puree can off the shelf, these two cans often look similar!

What Makes Them So Fluffy?

Creaming the pumpkin, butter, and sugar before adding the other ingredients makes these cookies the perfect texture. Make sure to cream these ingredients first so you can achieve that amazing fluffy cookie. Keep your butter out 30 minutes prior to baking, and definitely don’t try and speed up the process by popping it in the microwave.

These cookies are so perfectly fluffy and spiced, that I couldn’t finish this blog post before whipping up a batch! The amazing aroma has put me in the coziest fall mood. I know these cookies won’t last long in my house, but they are so worth the bake every single time!!

Cookies

  • 1 cup butter (227 grams) 
  • 1 cup sugar (227 grams) 
  • 1 can pumpkin (425 grams) 
  • 2 cups flour (300 grams) 
  • 1 egg
  • 1 teaspoon baking soda (4 grams)
  • 2 teaspoons cinnamon (8 grams) from Mountain Rose Herbs
  • 1 teaspoon salt (4 grams) 
  • 1 teaspoon ginger (4 grams) 

Frosting

  • 3 tablespoons butter (about 42.5 grams) 
  • 4 teaspoons milk (20 grams) 
  • 1/2 cup brown sugar (100 grams) 
  • 1 cup powdered sugar (160 grams) 
  • 3/4 teaspoon vanilla (3.7 grams)   ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Preparing the spices

Allow butter to soften and bring egg to room temperature. Cream butter, sugar, and pumpkin well.

Add the rest of the ingredients except the flour. Add flour 1/2 cup at a time, and stir until well mixed. The batter will be pretty thick and dough- like. That’s ok.

Drop spoonfuls on greased cookie sheet. Bake 12-14 minutes. Let cool completely before frosting.

For the frosting, in a saucepan on low heat, melt butter, milk, and brown sugar. Stir slowly until melted. Once melted, remove from heat, and stir in powdered sugar and vanilla. Spread onto cooled cookies and enjoy! This will thicken really quickly, so make sure and make it just before spreading on the cookies.
