Fall isn’t too far off, and I am so excited! I love the warm, cozy vibes, the amazing scents we connect with the fall season, and I’m so in love with pumpkin spice. This pumpkin spice granola is a pantry staple for my house in the fall, and honestly, all year round. The warming spices make the house smell so wonderful, and the fresh ginger is a total game changer. If you’re looking for the perfectly crunchy, warm and cozy, best smelling granola, you’re in the right place. And did I mention this granola is 100% vegan! (Basically maple instead of honey wink wink!)
What Spices can you put in?
You can add anything you want, but personally, I love using fresh ginger. Ginger is warming, aids in circulation, digestion, and all around is a miracle herb. You may roll your eyes when you see fresh ginger, but you can easily peel it with the back of a spoon. Then use a microplane to grate it quickly. Don’t skimp on this, it really makes the difference. Cinnamon is also an herb that not only is a staple during fall baking, but is great for circulation and a warming herb to use more of as the weather gets colder. Don’t hold back if you love it!
Can you Make it Gluten Free?

Add in your favorite nuts and seeds, but make sure you use fresh ginger – the secret to why this granola tastes so good. After one batch, you’ll definitely understand why this is a fall pantry staple.
The Best Pumpkin Spice Granola

Pumpkin spice granola with a secret ingredient- fresh ginger! This warming autumnal granola will give you all the cozy vibes this season!

For the burger
- 3 cups Bobs Redmill gluten free oats (240 grams)
- 1/4 cup fresh ginger (28.3 grams) peeled and grated
- 1 cup crushed pecans (109 grams)
- 1/2 cup raw sunflower seeds (66.5 grams)
- 1/2 cup pumpkin seeds (60 grams)
- 1 cup shredded coconut (80 grams)
- 1/2 cup coconut oil (108 grams)
- 2/3 cup maple syrup (227 grams) (add a little more if you like sweeter)
- 1 teaspoon vanilla (4.2 grams)
- 2 teaspoons pumpkin spice (8 grams)
- 2 teaspoons cinnamon (8 grams)
- 1/2 teaspoon salt (about 3 grams)
- Pinch of cardamom
Preparing the spices
Peel ginger with the back of a spoon. Grate with a microplane.
In a sauce pan, heat coconut oil and ginger on low, stirring slowly.
In a food processor, grind pecans for a few seconds.
Pour the coconut oil and ginger over the oats and nuts. Add in the spices and stir. Add maple syrup to your liking. If it’s too dry, add more coconut oil and/or maple.
Spread onto cookie sheet and bake 30 minutes at 350. Every 10 minutes pull it out and toss, and re- spread, to ensure no burning. Enjoy!
