What is this new dalgona coffee trend that the world has fallen for? It’s all over the internet, originating on Tik Tok. Firstly, it satisfied the coffee fix, when people were staying home and wanted that frothy frappuccino they could not easily buy from Starbucks!
What is Dalgona Coffee?
Dalgona coffee is made with four simple ingredients that create a beautiful whipped texture to dollop on top of a glass of milk. You can make it as a hot warming beverage, or alternatively, on iced milk. I had to try it, but I didn’t have instant coffee or matcha. So I used butterfly pea powder, which creates the pretty robin’s egg blue color. It’s delicious and also SO fun to make!
Why Is It Called Dalgona Coffee?
Dalgona coffee originates from India and Pakistan where it is known as whipped coffee. But since actor Jung II-Woo traveled to Macau, he nicknamed the drink “dalgona” because it looked like the traditional Korean spongecake. From there, it caught on, on Tik Tok, created first by @imhannahcho, and immediately went viral.
What Does It Taste Like?
The original coffee made with instant coffee grounds taste like you’re biting into a coffee pillow. It’s creamy and sweet with the flavor of coffee. Surprise surprise! The point is, I think it’s really fun to drink!
How To Make It...
The original version of dalgona coffee is made with:
- instant coffee
- boiling water
- sugar
- milk
You need a standing electric mixer or I use an electric hand mixer by vintage cuisine. Be patient and mix it up long enough to ensure the best foam. The basic recipe is two tablespoons instant coffee, two tablespoons sugar, and two tablespoons boiling water. You can also use one tablespoon sugar if you don’t want it so sweet, which is my preference.
A Version With Butterfly Pea Powder...
In order to achieve that frothy topping, I used aquafaba, which is the liquid from a can of chickpeas and can easily be whipped us a merengue. This is a great egg substitute by the way! Whipping with my hand mixer for about five minutes gave me the desired frothiness for the Dalgona coffee. Then I added a little bit of butterfly pea powder which gave it this beautiful shade of blue! Dollop it onto a jar of oat milk, and garnish with an edible flower, and you’ve got a fancy drink!
Dairy Free Dalgona Butterfly Pea Whipped “Coffee”

For the burger
- 2 tablespoons sugar
- 2 tablespoons boiling water
- Liquid from a can of chickpeas (aquafaba)
- 1 teaspoon butterfly pea powder
- 2 cups oat milk
Preparing the spices
Strain can of chickpeas into a bowl to use the liquid from the can. Use a handheld electric mixer to whip them until fluffy.
Meanwhile boil water and pour two tablespoons in a bowl with sugar and butterfly pea powder to dissolve. Once the aquafaba (chickpea liquid) is frothy, add in the blue bowl of sugary goodness. Whip until frothy! Be patient.
Fill two mini small jars with oat milk and ice and spoon the frothy blue on top. Garnish with some edible flowers.
